This is one of the most wholesome foods made from milk. Compsey Creamery is a cottage cheese producer of quality product that is high in protein. It makes a tasty addition to a varied and well-balanced diet. It is ideal as a filler and carrier of flavour in sandwiches, potatoes and salads.
Our Cottage Cheese is a fresh, soft, unripened cheese consisting of curds of varying sizes, mixed with a mildly cultured cream dressing.
Compsey Creamery cottage cheese is delicious eaten plain or mixed with fruit, vegetables, or seasonings. A traditional salad ingredient, it is also used in baking, especially cheesecakes (sometimes known as curd cakes), and as a filling for baked potatoes, sandwiches or pancakes.

Compsey Creamery – Cottage Cheese Producer
We take locally sourced Irish milk from Bord Bia Quality Assured farms. We pasteurise it and then separate the milk into skim milk and cream. We use the skim milk to produce the curds and whey. The whey is drained, but never pressed, from the curds. We add lactic acid bacteria to the cream to produce a creamy, slightly cultured dressing. The dressing is then added to the curds and they are mixed together.
