Full Fat Soft Cheese has a soft, spreadable texture and is popular with baked cheesecake and pâté makers.
Compsey Creamery Full Fat Soft Cheese is scrumptious eaten plain or mixed with fruit, vegetables, or seasonings; it also can be used in baking, especially baked cheesecakes, and as a filling for baked potatoes, bagels and pancakes. A great ingredient in pâtés.

Compsey Creamery – Full Fat Soft Cheese Producer
Compsey Creamery Full Fat Soft Cheese, is made using whole Irish milk from local grass fed cows. We pasteurise the milk and then separate it into skim milk and cream. We use the skim milk to produce curds and whey. The whey is drained from the curds. Lactic acid bacteria are added to the cream to make a creamy, slightly cultured dressing. We then add the dressing to the curds and blend the cheese to give a smoother texture.
